Sidste uge lavede jeg to nye ting, begge to fra nye opskrifter at jeg modtog fra min svigermor. Jeg kan lave mange slags af cajun mad og mexicansk mad men jeg ville at tilføje nye ting til vores menu....især ting at jeg har spist hos min svigermor som smager RIGTIGT GODT! Så jeg spurgte hende efter opskrifter til "Lakserulle" og "Blommekage", og siden de var begge to så nemt at lave og begge to så dejligt, bestemmede jeg at dele dem!
Last week I made two new things, both from recipes that I received from my mother in law. I can make all kinds of Cajun food and Mexican food, but I have wanted to add things to our menu....especially the things that I have eaten at my inlaws that taste SO GREAT! So I asked her for the recipes for "Salmon rolls" and "Plum cake", and since they were both so easy to make and so yummy, I decided to share them!
We eat quite a bit of salmon in Denmark, so I am always looking for new ways to prepare it. Salmon rolls is a cold dish and they can actually sit in the freezer until you are ready for them!
Du har brug for: 2 pakke røget laks, 1 pakke Philadelphia creme ost, frisk dild, 100 g røde kaviar, salt/peber og citron.
You need: 2 packages of smoked salmon, 1 package of Philadelphia cream cheese, fresh dill, 100 grams of red caviar and lemon.

Smøre creme ost på hver stykke af laks. Smøre kaviar på creme ost og drysse med dild og krydderi. Rulle laks op og sætte i et fad. Presse citron juice over laksruller og sætte fadet i køleskabet få timer eller overnatte. (Du kan også fryse lakseruller og serve senere.)
Spread cream cheese onto each slice of salmon and then spread the caviar on top of the cream cheese. Sprinkle with the fresh dill and spices (My mother in law recommends salt & pepper, but I used my "Slap ya mama"). Roll the salmon up and set in a dish. Squeeze the lemon over the salmon rolls and set the dish in the refrigerator for several hours or overnight. (You can also freeze the salmon rolls and serve later.) 


Siden jeg flyttede fra Texas, landet af "desserter laves med svinefedt", kigger jeg altid for nye desserte opskrifter at jeg kan lave UDEN svinefedt. Jeg har fundet mange, men "Blommekage...AKA 15ogramme kage" er de nemmest og det smager så godt! Du kan bruge mange slags af frugt. Min svigermor lavede med blommer, og jeg har prøvet brombær og æbler og Mads elsker alle dem!
Since I moved from Texas, the land of "desserts made with shortening", I am always looking for new dessert recipes that I can make WITHOUT shortening. I have found many, but "Plum cake AKA 150gram cake" is the easiest and tastes great! You can use many different types of fruit. My mother in law makes hers with plums, and I have tried both blackberries and apples and Mads loves them all!
Koge frugt med vand og sukker til blød og sød. Imens frugt koges, laver din dej--150gramme sukker, 150gramme mel, 150 gramme smør. Bland sammen så dej er "ikke våd og ikke tør" så du kan "smuldre" det. Sætte kogt frugt i bage-fad og smuldre dej over frugt. Drysse toppen med skæret mandler. Bage 200grader for 35 minutter. Servere med creme fraise på toppen. LÆKRE og NEM!
Cook fruit with water and sugar until it is soft and sweetened how you want it. While the fruit is cooking, you should make your dough--with 150 grams of sugar, 150 grams of flour and 150 grams of butter. Mix these together so the dought is "not wet and not dry" so you can crumble it. Set the cooked fruit in a baking dish and crumble the dough over the fruit. Sprinkle the top with chopped almonds and bake for 35 minutes at 375. Serve with a "dollup" of sour cream on top. DELICIOUS and EASY!

Apropos things traditionally made with "svinefedt". Now that you're i Jylland - have you tried "fedtkager"?

Maybe you can create your own cookbook of Cajun Danish fusion foods...you could call it Canish, or Dajun...
Well, I love salmon but have never tried caviar, so that stopped me a bit..the plum cake looks almost like a cobbler?? Is that sour cream on top? Sure looks interesting and I'm always looking for something new.
Why don't you make American desserts? I'm telling ya if you can get hold of margarine where it says to use shortening, just use margarine..it should work.
I read you were vegetarian, do you eat fish and chicken and just no red meat or??

Mums - as we say in Sweden (means: yummy!) The dessert sounds very much like the British crumble, where we cook fruit and then put the 'crumble' mixture on top and bake in the oven.

Those salmon rolls look fabulous. But the caviar? Is it inexpensive over there or something? I'm trying to figure out where I could even buy it here in TX. Maybe I could substitute capers?
The plum cake looks wonderful, too. Rather like an apple crisp. We always used to put ice cream on top, but I love the idea of sour cream. Yummy!

go to www.slapyamama.com..... greatest all-inclusive spice you can ever use! I never use salt or pepper.... I use this for everything! But you have to like SPICE!!! (and nope, cannot get it in DK! I ship it to Jess and she brings it!! )
Kevin--caviar is super cheap here... like 100grams costs about 16dkk...so about 3 dollars! But there is "fake caviar" you can get... which tastes the same... we call it røræg... so look for some kind of fish eggs.
Lady Fi- the plumcake is very much like a cobbler... just a bit different and yummy! And putting the sour cream on top sounded gross at first, but I LOVE IT! Adds a new flavor to the sweetness!
We can't wait to try something new.
