The Danish forests are FILLED with mushrooms right now! I have never seen so many different varieties of mushrooms before! They are everywhere!
People walk through the forest picking mushrooms to use in their cooking while others pick them to sell to restaurants! However it is really important that you know something about mushrooms before you start plucking and eating!
If you do not have a book about mushrooms, I recommend that you take a "Danish forest expert" with you like my mother-in-law! She knows so much about the things that grown on the Danish forest floors! Maybe your mom or mother-in-law is an expert, too? Ask her!

I'd like to add that if you don't have any knowledge about local mushrooms, then a book is not enough. With some mushrooms, the differences between an edible and a poisonous mushroom are minute.
PS. Did you know that the vikings sometimes used to eat the red mushrooms with the white dots (rød fluesvamp) before a battle? The poison helped them going beserk.
That first one is a Karl Johan (porcini), no? I hope you ate it!!!
And whatever you do, don't eat that red one - highly poisonous!

My spouse is also a mushroom expert! I love that many Danes know a lot about forests. It is one of their special and redeeming features :)
The mushrooms totally gross me out - they are in our yard and I HATE them!

Wow! I've always wanted to see one of those red mushrooms! I've seen them on the Smurfs, but I wondered if they really existed somewhere. I guess the Smurfs must have lived in Denmark. That would explain why they were so happy all the time!
One of the girls in my Norskkurs led us on a wild goose chase for Chantarelles...or whatever they're called. No luck that day! I'm no mushroom fan, though Sverre would eat a bucket of them if given half the chance!
